Quinoa

Quinoa is considered to be an ancient grain - though experts hasten to point out that it is actually a seed. They are considered to be a protein and are gluten-free.

This "Moroccan" Quinoa pictured here is perhaps unusual for a side dish accompanying chicken. It is enhanced by the use of butter, honey, cinnamon and pistachios - almost sounds like a dessert, right? In truth, I think it would be a great breakfast!

If you haven't yet added quinoa to your menus - for breakfast, salads, dinner or desserts - read on.

Creamed Mushrooms on Toast

IMG_7345-creamed-mushroom (2).JPG

As the Holiday Season approaches, you may already be thinking about the need for appetizers. Here's one of my favourites.

Use ordinary cremini mushrooms or a fancier combo. This tastes best on toasted egg bread. Let guests serve themselves or prep a fancy platter for an impressive show.

Tuna Melt Canapés

IMG_8384 (2).JPG

This recipe has been in the KB repertoire since 2010 when I stumbled across it in Saveur. That they are called canapés is so "lah-di-dah".

Really, you can make these for company or have them for lunch. The tuna filling is a great excuse to use mango chutney and curry, and can even be used in a hearty sandwich with lettuce or your other favourite sandwich garnishes.

Andre's Asparagus

IMG_5981 (3).JPG

Want to be a bit more "fancy pants" than simply grilling or boiling that wonderful fresh asparagus appearing in markets now?

This "salad" is served room temperature / "cold" with some steps that can be done ahead of time, and others that are done à la minute.

Don't be intimidated. With some prep it all comes together nicely!

Deviled Eggs

IMG_2603 (4).JPG

It's almost that time of Easter bunnies and chocolate and egg hunts. One of many cultural celebrations heralding the progression from Winter to Spring and it's hard to imagine anyone who bemoans this seasonal transition.

Easter is late this year, so you still have time to consider adding deviled eggs to your menu - especially if you plan to have an Easter ham.

Mushroom Nuggets

Mushrooms Canada has just re-tweeted my recipe that they selected for inclusion on their site. Check it out!

These are a popular Hungarian appetizer - and even considered to be somewhat "classy".

Mushrooms Canada is very rich site full of great info and even more recipes. Read and remind yourself of all the nutritional value. You'll be wanting to make mushrooms every day - and why not!

Cheese Straws

Now that you can purchase puff pastry in sheets, I find myself reaching for it often for savoury and sweet treats.

These Cheese Straws from Ina Garten are a hit all year round, but will be welcomed at holiday events. I always make these "day of" and not the day before - but day before prep enables you to make this magic happen quickly.

Swedish Lentil Meatballs

swedish-lentil-meatballs.jpg

This is not (yet) an oft-repeated family favourite. Came across the recipe - they looked yummy, I love lentils, and it is, after all, the International Year of Pulses - so I tried them - and will make them again! The recipe is adapted from Lentils Canada. Recipes for cream sauce and honey garlic sauce offer variety - and there's a vegetarian option.
