There are over 400,000 "orecchiette with sausage" recipes online. This has evolved from a long lost source. The resulting meal is part of Mr. KB's repertoire, and I am sure it tastes extra special because it is made for me with love.
2 TB olive oil
1 onion chopped
4-6 sweet Italian sausages (out of casing)
Heat oil in fry pan. Add onion and cook until slightly translucent. Add sausages - breaking them into small chunks by hand and/or with a wooden spoon while stirring / cooking. Cook until sausage meat is lightly browned, with little/no pink remaining.
3-4 cloves garlic, minced
1/2 cup white wine (good wine that you would drink)
Add garlic and cook two minutes. Add wine and reduce by half.
1 can San Marzano tomatoes (796 ml)
Crush the whole tomatoes by hand or chopping (by hand is fun). Add tomatoes, reduce heat and simmer for 30 minutes.
Season to taste with salt, pepper. Serve with orecchiette pasta (450 g bag cooked to your liking). We like to add the pasta to the sauce. Garnish with Parmesan.
