You can't make muffins without a muffin tin, and you can't make madeleines without a madeleine pan.

These tend to be non-stick (though recipes still suggest a quick once over with non-stick spray).

Mine cost about $10 each, though I had to go to a specialty kitchen / cooking supply shop. Sadly, in other locations they didn't even know what I was talking about when I inquired.

The above inquiry refers to my recent hunt for a second pan. Recipes tend to have enough batter for two dozen and I finally decided it was worthwhile having two pans - filling the second, while the first is baking.
