It’s still chilly. Still time to enjoy a hearty soup that warms the tummy and the soul. Mind you, this soup would be great anytime!

I have few soup recipes that use corn, yet I love corn and corn in soups. And there’s bacon! What’s not to like?

Hungarian Spring Pea Soup (Zöldborsóleves)

Springtime in Hungary? This soup appears often - a broth filled with delicate flavours, fresh sweet peas, and the texture of little dumplings (csipetke or nokedli).

Lovely with spring peas, it is just as tasty with frozen peas.

Hungarian Goulash

I get daily newsletters from the wonderful Saveur and their team always impresses especially with East European recipes. I could not ignore this recipe and have already made it more than once - with a few tweaks.

This is a beef goulash which is technically more traditional since the origins of the dish are linked to the “cowboys” herding cattle. In Hungary, goulash is a soup - period. No debate.

Irish Yellow Broth Soup

I have been making this soup for almost two decades. It tastes terrific for very little effort. From what I can tell it originates in Northern Ireland.

Soups can be an easy way to meet advised daily vegetable intake. - and they have another "secret" property. (Dieters take note!)

Turns out there is science that supports the view that nothing beats soup for making you feel full!

Scallop and Corn Chowder

Who doesn't wish for "restaurant-worthy" recipes for a dinner party - a "show-stopper", as they say.

You can make this in front of guests if you have a kitchen cum theatre. Or (with preparation) you can begin this about a 1/2 hour before serving. 

It serves 4, but can be doubled easily, and there are options for substitutions.

Everyone would wish for seconds, but they need to save room for the rest of your fabulous dinner!

Mulligatawny Soup

Mulligatawny Soup - sounds a bit exotic, but is also hearty and that's what we often like now that soup season is upon us. (Make it without chicken, and using vegetable broth, for a vegetarian treat.)

I'm sharing the recipe I use from the Podleski Sisters (aka Looneyspoons) Crazy Plates (1999). I have just recently acquired Greta's newest "baby" - Yum and Yummer - and will look forward to trying some dishes from there. Not only does the new book have photos of each recipe, but a link to a "how to" video - for each and every recipe!

Cabbage Soup

This is a favourite recipe in the KB Kitchen - a classic Hungarian dish that is enjoyed as soon as cabbages appear at markets and all through Winter and Spring.

Make a double batch. As is often the case, this soup is better on day two!

Dis you know that abbage is a great source for vitamins C, B6 and folate?

Curried Chicken Soup

Here's a quick curry soup. Although curry may evoke images of India, apart from using curry, I am not sure this would get a lot of check-marks as an Indian dish - but it's still yummy!

The original recipe used the term "madras curry",  however, "the name 'Madras Curry' is not used in India, but was invented by restaurants in Britain." (Wikipedia) I use my own curry mixture - try it! - and add more heat if you wish.

Mushroom Barley Soup

Mushrooms are popular in the KB kitchen - versatile, in so many dishes. As I add this to the site, it's nearing the end of Winter and we all feel sun-deprived - thus possibly low on Vitamin D. Did you know mushrooms are a source of vitamin D, fibre, minerals and B complex vitamins? 

This soup not only tastes great, but is a beautiful sight to behold with rich, deeply coloured broth.

Hungarian Bean and Smoked Sausage Soup (Bableves)

Temperatures today were in the double digits, but as long as it is still officially winter go ahead and make this hearty soup.

This continues the theme of a Hungarian bean soup where the flavour of paprika mingles with smoked meat - except in this case it is smoked sausage. These are easy to find in local delicatessens.

Hungarian Ham and Bean Soup

Though the Winter has been mild, we still crave hearty soups this time of year. This rustic soup is guest- or even restaurant-worthy to those who are open to "country style" food. With hunks of hearty brown bread (and beer) you'd be satisfied and have no room for dessert! 

It absolutely captures my memory of a smoked ham bean soup. If you have about two hours, cozy up reading while the aroma of this soup fills the house.

Curried Cauliflower Soup

This recipe is from TLC - The Looneyspoons Collection Part of the Podleski Brand is a divine sense of humour. Technically, they call this recipe "Melancauli Baby". 

As I write this, the cost of cauliflower is through the roof(!) but if you splurge and buy one, you can make this fabulous soup (8 servings, 142 calories each). You won't regret it. (For a full meal, add cooked chicken or turkey.)

Potato Leek Soup

Am not sure who decides these things in the media, but just lately I keep bumping into articles stressing how great leeks are for our health - so I dusted off this Julia Child recipe. Much of the creaminess of this soup comes from the potatoes - though it can be enhanced with cream.

This is easy, fast, tasty and nutritious! Make it a winter staple!
